End-Grain and Bacteria!
We wanted to highlight one of the most interesting features of end-grain cutting boards. Studies have proven that hardwood end-grain cutting boards are poor hosts for bacteria. The best part about hardwood end-grain boards is the fact that a new board performs just as good as a well used one. This is not the case with synthetic cutting boards which need to be replaced after heavy use. Here are some articles that go into more detail on how bacteria performs on wooden boards.
